We have had an abundance of tomatoes coming out of our garden. This past weekend I was trying to decide what to do with them, when I came across this post from Whole New Mom. Canning just takes so much effort, and with us not feeling so great, I ruled that method out pretty quick. But dehydrating? Yep! I can handle that!
These were so yummy! By just adding a little bit of olive oil, and some herbs, it tasted like a whole Italian meal all wrapped up in one little dried tomato. WNM suggested using basil, but I ended up using rosemary, garlic, and dried onion. I find these to be the perfect snack, while rocking away on my porch taking in all the scenery.
